Vegan or Egg Free Brownie Cookies Gluten Free
These cookies were delicious straight out of the oven and also the next day after I stored them in the fridge. They were chewier the next day., and that’s how I personally prefer them. I added dark chocolate chunks, I think would be good with goji berries or or those dried tart cherries. I had some left over ganache so drizzled some of that on top, but it wasn’t needed, so if you dont have any, dont worry!
Ingredients
- 70g melted butter or oil
- 1/2 tsp vinegar
- 300g chocolate baking mix
- optional; chocolate chips, dried fruit, nuts
Instructions
- preheat oven to 180
- mix together the oil or butter, chocolate mix and any extras
- should be slightly sticky and hold together, add more liquid if not
- roll into golf sized balls and press down slightly onto a lined baking tray
- Bake for 10 minutes until set on the top but still soft. They will harden as they cool.
I just tried these with oil and it was a disaster. If using oil instead of butter I suggest using about 100g and see how that goes. Also, how much of the optional ingredients is best? I tried 1/4 cup of sultanas but with the batter being so runny with too much oil it’s difficult to tell if I had the right quantity. Also, I’m dairy intolerant so butter isn’t an option but even 140g of butter seems a lot for the amount of dry ingredients. It would be interesting to know if anyone else has tried this with the stated quantity butter.
Ah I see what the prob lem is now. I just tried to make them and it should be 70G not 140g!! Send me an email and Ill send you out a replacement
When I make the slice I add 1/2 desiccated coconut and I think that confused me when rewriting this recipe.

Hey Julena – I LOVE your baking mixes! Unfortunately I had the same issue with the oil. I used 90g and it was still really wet so I put it in a loaf tin instead. It hasn’t set at all but I’m hoping as it cools it might.
