Simply add any type of cut stone fruit to your baking mixes! Of course I don’t have a photo of the cake as it was served and eaten rather quickly, but I can show you how good it is in your muffins as well.

I have been using plums a lot lately as I had a lot of very ripe ones. And due to my daughters birthday falling on a particularly hot day, I ended up quickly creating her birthday cake from the Vanilla baking mix and some sliced plums (due to not being able to get out of the pool until last minute)

The family were very impressed! And then were pleasantly surprised when they discovered how easy and simple it was to create.

I find the stone fruit addition just takes your baking up a few notches. And I’m all about baking delicious morsels with ease. Hot oven on hot days are no fun.
For the cake, I poured half the batter into the tin, then added the sliced plums in a nice circular pattern, then poured the rest of the batter on top.
