Ingredients

1 packet of HGG ginger baking mix
2 eggs
3/4 cup milk (i used coconut)
125g unsalted butter, coconut oil, shortening, or oil
1/4 cup candied ginger
1/2 cup coconut sugar
1 tsp ginger
1 cup boiling water

Instructions

Preheat oven to 180. Place the ginger mix, eggs, milk, butter and candied ginger into a large bowl and mix till smooth. (I don’t see why you couldn’t throw in some chopped dried date as well to be honest. Must try that next time)

Pour the mix into your baking cups and place on baking tray

Mix the coconut sugar, ginger and water together, then  gently spoon over the puddings and bake for about 30-35 min

And Ta-da! easy as sticky ginger puddings to delight you and your friends!
