Rich Chocolate Fruit Truffles

These tasty little gems have been my go-to quick and easy dessert for over 8 years. Great for forgetful people, or unexpected guests as you can whip them up in minutes. Perfect for parties, roll them small for kids events, add some liqueur at Christmas time (well anytime really, just maybe not for kids). I like to store mine in the freezer, an attempt at not consuming them all at once, and they freeze really well.

Instructions

Place the fruit, nuts, cocoa, oil, coconut and vanilla in a food processor and process till the mixture forms sticky crumbs. Using wet hands, roll the mixture into balls. Roll each ball in coconut and refrigerate till required. Or enjoy at room temperature, where ever your personal tastes take you.

A note on raisins. The only ones I have found with no vegetable oil are Chantals. I purchase mine at IE produce

Ingredients

  • 1 cup pitted dates
  • 1 cup raisins
  • 1 cup walnut pieces
  • 2 tablespoons cocoa
  • 1 tablespoon Oil (I use macadamia due to the neutral taste. I tried coconut oil once but it was not as popular at all!)
  • 1 1/2 tablespoons dessicated coconut
  • 1 teaspoon vanilla essence
  • 1 tbl maple syrup (optional, but I find it takes it up a notch) extra coconut for coating
