The simple addition of fruit into the vanilla mix turns them from rather nice to really nice!
Blueberries are always a favourite and you can add grated lemon peel. BUT By far the best fresh fruit I have tasted baked into the mix are plums. Simply divine. Just chop them up and fold them in.
Sliced nectarines and peaches make for a pretty looking cake or muffin.
And during winter I like to add frozen raspberries. These bake beautifully and are very popular with my daughter’s friends
And you like banana, squish two ripe ones and just bake for a little longer.
But it’s not all about the vanilla mix. Pear, dates and figs are a natural fit with the ginger, and frozen raspberries are also delicious with chocolate. And I’m pretty sure you can throw coconut into anything.
