Almond Flour
The primary ingredient in all of our products is Almond Flour. We love almond flour because of its high nutrition content and neutral effect on blood sugar. It’s rich in protein, monounsaturated fats (like olive oil), Vitamin E, magnesium, and potassium and also makes very rich, moist baked goods – which is very obviously important to us!
To create the flour almonds are soaked to remove the outside skin, through a process called blanching which removes the anti-nutrient inflammatory portion of the almond (phytic acid). The almonds are then finely ground into a flour and mixed with the other nutrient dense and natural ingredients in our muffins mixes, ready for you to create freshly baked deliciousness in your home.
Coconut Sugar
We choose coconut sugar as a sweetener because of its low glycemic index, nutritional value, and sustainability – because we care about the environment as much as we do good food!
The numerous health properties of coconut have made it a popular ingredient in the paleo diet in a variety of forms, and coconut sugar is another of these. The caramel flavoured sugar is made by crystallising the sap of the coconut palm tree, creating yet another way to maximise the use of products from these amazing plants.
Coconut sugar’s nutrient content is far richer than other sweeteners; it is especially high in Potassium, Magnesium, Zinc, and Iron. Table sugar has a glycemic index of 65, while coconut nectar is under half that at 35 which means it has a much gentler impact on your blood sugar.
As well as being kind to your body, coconut sugar is also earth friendly in terms of its minimal resource requirements and sustainability. Coconut palms produce an average of 50-70% more sugar per acre than sugar cane using less than 20% of the soil nutrients for production. In fact, coconut palms can grow in severely depleted soil and use very little water while actually improving soil fertility for other plants.
Tapioca Starch
Tapioca starch is derived from the cassava plant root. Originally a South American native, cassava is now cultivated and enjoyed around the globe and known by other names including manioc, yuca and manihot. It offers a rich source of dietary fiber, good cholesterol and protein and also contains members of vitamin B-complex, along with iron, magnesium, calcium and selenium.
Coconut Flour
We use PureCoco organic coconut flour as a delicious, healthy alternative to other generic flours. It is made with minimal processing and therefore is un-refined resulting in a natural coconut meal/flour.
Ground from dried, defatted coconut meat, coconut flour is high in fibre and low in digestible carbohydrates. All of PureCocos range is raw, naturally organic coconut and cacao products from fair-trade farmers from the Pacific and Asia.
Cocoa
The happy ingredient! There’s no denying that chocolate makes us feel good but there’s a real scientific reason why; cocoa contains phenethylamine, a neurotransmitter found in the brain that acts as a mood elevator and natural antidepressant. It can also boost endorphin’s which act as the body’s natural happy opiates and raise serotonin, another contributor to feelings of well-being and happiness.
In addition to all of that happy news, cocoa is also a great source of antioxidants thought to help protect against cardiovascular disease, it’s low in calories and fat and provides a decent serving of fibre, iron and magnesium at the same time. So there you have it, the tastiest way to happiness and heart health is a scientifically prescribed dose of good quality dark chocolate – and who are we to argue with science?
Ginger
Ginger is like an uplifting gift to your digestive system. This time tested wonder spice has been used in Asian, Arabic and Indian cultures for thousands of years as a herbal remedy to aid digestion and ease nausea. Among it’s other many health benefits, ginger is also high in antioxidants, provides anti inflammatory benefits and even aphrodisiac properties! The scientific name Zingiber officinale is very appropriate, its distinctively zingy, warming flavour creates one of the most captivating sweet treat tastes of all time.
