Stonefruit Loaves Gluten Free

Gluten free stone fruit paleo loaf

This idea was inspired by a DISH recipe for a plum pound loaf. I made it two ways just to see how it worked. One with creamed butter and the other just with the original oil, egg and water combo from the back of the vanilla box.

I did the butter one with a mix of stone fruit, basically what ever was in my fridge. And the classic one with plums. I think I preferred the mix fruit butter version…not sure though. Maybe I better make it again….

Ingredients

  • Vanilla Baking Mix
  • 2 tbl oil
  • 1 cup water
  • 2 eggs
  • 3 tbl coconut sugar
  • 1/2 tsp 5 spice
  • 1/4 tsp cinnamon
  • 8 x summer stone fruit
  • FOR THE BUTTER VERSION
  • 160g butter (organic)
  • 2 eggs
  • 1/2 cup water

Instructions

  • Heat oven to 150 fan
  • Mix sugar and spices together and set aside
  • Halve stone fruit (slice into 4 if large)
  • Mix eggs, water and oil together
  • Add Vanilla baking mix and stir to mix well
  • Pour half into lined loaf tin
  • Place half the stone fruit in tin in one layer
  • Sprinkle over half the spice mix
  • Pour in remainder of batter
  • Layer rest of fruit on top
  • Sprinkle rest of spice over the fruit
  • Bake for 1 hour and 10 minutes
  • Cover top or lower the loaf if getting too brown (mine didnt need it but everyones ovens are different)
  • Leave in tin to cool
  • NOW FOR THE BUTTER VERSION
  • Cream butter
  • Add 2 lightly beaten eggs
  • Add 1/2 cup water
  • Add vanilla baking mix
  • Continue as recipe above
