I received an email asking if you could make the ginger mix into a loaf, and since I had just made a lot of mini loaves successfully, and as I’m happy to test anything ginger, I scooted over into my new kitchen (possibly another reason why I’m baking up a storm recently) to try it out. And the answer is a resounding YES! Gingerbread happiness right here! I added 2 tsp of baking powder (I get mine from Harvest Wholefoods) and some (lots) chopped dried dates, plus some ripe pear that I had sitting around giving off that beautiful ripe smell pears make (one slice for the loaf, one for me…). Tin size 22 x 11 x 7 cm (8.5×4.5×2.75in) and it took 40 min at 180. My advice is to set your timer for 30min and then check every 5 min.

This was stored in the fridge, where it kept well for over a week, due to the fact I forgot I had some left. And today I toasted it with a touch of butter, and it was heavenly. I wondering if you could make french toast with it, served with poached or fresh pear, and some thick yoghurt……pistachios sprinkled on top. …Definitely a weekend brunch idea for those indulgent Sunday mornings!
